A New Day!

     Hello all!  A few things really quick.  I feel like I've been a little lax on my last couple entries and I want to apologize.  I used to have my blog done by 10 or 10:30am, but now I'm not getting it done till around 1 or 2 just because I haven't been sleeping well.  So I'm planning on getting back on schedule soon. :-)





FOOD

     I'm going to share a recipe my husband and I made up.  I was surprised how well it came out!  Super yummy chicken tacos!
     Now, the thing about me when I develop recipes, I don't use measurements.  I just pretty much eye ball everything.  So, I'm going to issue you a challenge.  Try this recipe!  No measurements, just add ingredients to taste.

Chicken Tacos

Chicken Marinade Ingredients:
4 boneless, skinless chicken breasts.  (Usually bout 2 brests per person)
An Orange
A Lime
Olive Oil
An Onion
Garlic
Cilantro
Salt
Pepper
Garlic Powder
Onion Powder
Chili Powder
Cayenne Pepper
Jalapeno Juice from a jar or can (optional)

Directions:
Rinse the chicken off after taking it out of package.  Lay the chicken breast on a cutting board and puncture several times with knife.  (This is so it can absorbed more flavor.)  Place chicken breast in a ziplock.  Cut slices of the orange, lime, and onion and add to the chicken.  Leave enough of the fruit to squeeze in some juice.  Mince the garlic, and chop the cilantro.  Add to the chicken as well.  Add your seasonings/spices little by little.  It's always better to add too little than too much because you can always add more.  And if desired, add you jalapeno juice.
Seal the ziplock nice and tight to avoid any leaking.  Mix the marinade by gently squeezing and moving the bag for a few seconds.
Marinate for 24 hours.
Other Ingredients:
Tortillas
(All optional)
Brown Rice
More Onion
More Cilantro
Avocado
Jalapenos
Cheese of your choice (I use sharp cheddar or cotija)
Sour Cream

Bake chicken on 350* for 45 minutes to an hour.  Make sure you pour everything from the ziplock onto the chicken.
While the chicken is baking, make your rice (fallow directions on package), and fry your taco shells in olive oil.  Make sure you make enough for everyone.  I make 3 - 4 taco shells each person.  To fry the taco shells, add olive oil to a frying pan and put on high heat.  Add just enough oil to cover the bottom of the pan, and then add more as needed.  Depending on how big your pan is, add 2 - 3 tortillas to oil and fry.  Wait until tortillas start to stiffen a little bit, then flip with tongs.  When the other side starts to stiffen, fold tortilla into taco shell and let stiffen even more and flip again.  Make sure the shell is stiff enough to keep it's shape, but not so stiff it's going to crack. Put finished shells on a plate with some paper towel to absorb the extra oil.  Now, you can either just add avocado, or make a quick guacamole.  To make guacamole just mush up avocado in a bowl and add lime juice and cotija cheese, or you can use guacamole mix, but why use that when it's so easy to make?
Once your chicken is done, shred or chop.  And that's it!  Add your toppings as desired and enjoy!
                       
  







FITNESS

     You never want to stick to the same exercise routine for too long.  If you do, you're body will start getting used to it and will stall your muscle building and weight loss.  You should change your work outs every 30 days.  They can be subtle changes, but make sure it's something you're not use to.  Instead of just jogging on the treadmill, try increasing the incline to 1 and jog for 5 minutes, sprint for 30 seconds, and then walk for 5 minutes.  You'll burn more calories, and increase your endurance!






WRIGHTING/LITRITURE

     I've been forcing my self to keep up with writing my story little by little.  I never thought forcing my self would bring any inspiration, but once I start writing it just kind of flows out.  So if you're lacking some inspiration with your writing, just sit down and write!  Trust me, once you get your momentum up, you might not be able to stop.








HUMOR

     Funny story time. 
     I have a cockatiel.  And sometimes he can be just as bad as my dog when it comes to wanting the food I'm eating.
     One day I was eating a rice cake with some honey on it and Optimus (my cockatiel, it was my husband's job to name him) next to me.  He started walking over to see what I was eating, and all of the sudden he jumped onto my rice cake and got stuck on the honey!  It was like birdie fly paper!  Poor thing was flapping and trying to get him self loose while I couldn't breath because I was laughing so hard.  Once I got him off the honey, I can to hold him and wipe the honey off of his feet.  I wish I had taken a video of that one!
