Out of Whack, But Back on Track!

     This week I was completely out of whack, but I wanted to make sure I posted something this week.  I don't want to make a habit out of skipping posts just because I'm not 100%.



 FOOD
     I've been making my husband's lunch to take with him to work recently, and I've been making him lemon herb chicken quite a bit.  My husband is not an easy man to please when it comes to what he eats, but this chicken was really a hit with him.  So I've been making it at least 3 times a week for him, and he loves it!
     Now I've made this with boneless, skinless chicken breast, and bone in thighs.  If you make chicken with the bone in it stays moist and just tastes better, but it does take longer to cook.  So keep that in mind when cooking chicken with the bone in.  And instead of recipe poaching off of Pinterest, ha ha, I actually came up with this recipe all on my own!  I know, shocking!

Butter Herb Chicken 

Ingredients:
Chicken Breast/Thigh
Olive Oil
Garlic Herb Butter
Salt
Pepper
Garlic Powder
Italian Seasoning

Pre-heat your oven to 350
Cover a cookie sheet with foil, and set aside.  

Pour about 2 tblsp of olive oil (I usually just eyeball it) in medium size pan, and heat on medium heat.
Once the pan is heated, place chicken skin side up.  Season skin with the salt, pepper, garlic powder, and italian seasoning.


Once seasoned, flip immediately and season other side.  Cover and cook for 5 minutes
After 5 minutes, flip and place a slice of herb butter on each piece of chicken, then cover and cook for another 5 minutes
After 5 minutes, repeat last step, and cook 3 to 5 minutes checking the chicken periodically.  Make sure not to over cook the outside like I did >__< we still need to put them in the oven
When outside is golden brown, place on cookie sheet and put in the oven for 20 minutes.
 

After 20 minutes, check the chicken by slicing the thickest part.  If there's any pink, it's not finished.  Place a couple more slices of the herb butter under the skin (if using chicken with skin, otherwise, place on top) and depending on how pink the chicken is, put back in the oven for 5 to 10 more minutes.



And you're done!  Serve with your favorite steamed veggie, or brown rice, or what ever you think would pare well with it!  Enjoy!








FITNESS
     These last couple weeks I have really been dropping the ball on my fitness.  And let me tell you, I've become a little depressed.  I haven't been able to get to the gym because my back has been giving me a lot of trouble.  And on top of that, I've practically been eating anything I want, which isn't good at all!  So, I'm expecting to gain about 5lbs by next week.  So why am I using my blog as a confessional?  Because I want to make sure everyone can see that even if you stop your progress, or even go backwards like me, it doesn't mean you've failed!  Every journey has it's struggles, and getting fit is a very difficult one.  It's good to keep your self accountable, but it's unhealthy to put your self down and make your self depressed like I have.  Use me as a BAD example!  When I go more than 3 days with out exercise, I already feel like I failed.  But you're only a failure if you give up!  If you fall, get back up, brush your self off, and keep going!  No matter how slow your pace is!




WRITING/LITERATURE


     My aunt recently published her first novel called Moonshine.  Here's a quick summary.

Tossed in a game of treasure, murder and the game between two me to reach the treasure first. Mica, who had dreamed of traveling and meeting new people, found that her dream was far from what she thought it would be. First kidnapped and then falling in to the hunt for the treasure. Her sister not far behind and her father is the designer of the game.

     Now, as cheesy as that sounds, it's 100% true.  My father always told me, you can learn anything you need to now out of a book.  You don't to spend thousands or even hundreds of thousands for someone to teach you something that you can teach your self practically for free.  
     I do believe I've mentioned my opinion on schooling before.  And like I said then, I'm not against learning, I'm against learning under terms and rules I have to pay for.  Unfortunately, most careers require some kind of degree.  So go to school, do the work they want to see, but learn under your own terms and rules!  Don't let schools take away your right to learn your way.

LEAVE PAULA DEEN ALONE!!!

     Can we just talk about how ridiculous this whole situation is with Paula Deen?  I mean, she's southarn, come on!  Like all other people in the world don't say worse things in the privacy of their own home!  What ever, I still think she's awesome!  Stay stong, Paula Deen!!    



FOOD

     The only thing new I tried to cook this week w:as okra.  I heard it was really tasty when cook properly.  Well, I must not have, because it didn't turn out like I expected.  It wasn't bad, but it could have been a lot better.  All I did was drizzle olive oil on it, with some salt, pepper, and garlic powder, and baked it at 400 for 25 minutes.  The outside was okay, but the inside was really slimy.  I think you're supposed to fry them or something like that.  Moral of the story?  Do some research before experimenting with food you've never worked with before. XD






FITNESS

     CROSS FIT!  If you're tired of your same old exercise routine, try Cross Fit!  You're body will probably hate you while you're doing it, but it will thank you in the end.
     Cross Fit is a cross between several different kinds of excises and movement.  It's a mix of aerobic exercise, gymnastics (body weight exercises), and Olympic weight lifting.  But please, don't let that discription chase you away.  Just like any other exercise, it can be adjusted to your fitness level.  So don't worry, you won't be snatching 350lbs.  (Look it up if you don't know what that is! :D)  The most important part is that it's something new to your body.  I've said this before, if you stay with the same routine forever you'll start to plateau.  Change it up!!!

Already Over Summer

FOOD
So good!!!
     My food experiment this week couldn't have gone better!!!  Just like most of the others, I found this recipe on Pinterest, and it was ridiculously easy and delicious!  I popped my own kernels using a paper lunch bag.   Just pour 1/4 cup of kernels into the bag, place in microwave, and heat for 2:20 minutes.  And there you go!  Homemade microwaved popcorn.  It's much more inexpensive to buy popcorn kernels then microwaved popcorn.  But, plain, microwaved popcorn works just as well for this recipe/   

!WARNING!
Please be very careful when if comes to heating and cooking sugar!  It can get extremely hot and can burn you to the bone!  So, if this were to occur, keep burn under cold, running water, and call 911!

 Mashmallow Caramel Popcorn

Ingredients
1/2 c. brown sugar
1/2 c. butter
9-10 marshmallows
12 c. popcorn

Directions
1. Microwave brown sugar and butter for 2 minutes. Add marshmallows.
2. Microwave until melted, 1 1/2 to 2 minutes. 
 Pour over popcorn.







FITNESS

     I recently discovered of this thing called a "mud run" a few weeks ago..  I've never heard of this before, so I decided to do some research, and I was ecstatic at what I found out!  It's a 5K run with obstacles, and mud, and stuff like that.  It might now sound fun to a lot of you, but to me, this is one of the best things I've ever come across!!!!  And lucky for me, there's one happening pretty close to me at the end of the year and I can't wait to participate!
     I will be participating at the San Birnidino location on November 10th.  It's a little pricey, but is totally worth it to get some good, fun exercise with friends and family!!  Check out http://www.mudfactor.com/!  Maybe you'll run into me there! XD





LITERATURE/WRITING 
      Peter Rabbit was one of my favorite stories growing up!  And I would hope the same for others.  The author was lovely Beatrix Potter.  I'm not going to say too much about the story or the author because I want you to discover it your self!  
     A movie was made about Beatrix Potter's life starring Rene Zellweger and Ewan McGregor called Miss Potter.  It's such a wonderful movie and really opens up your eyes to how these books came to life!

      I decided to spend my holiday with frozen deep fried food!  And let me tell you, it was glorious!!!  I didn't do anything fancy, I just bought a bunch of frozen food and threw it in the deep fryer.  No recipes, no extra effort.  I wanted to enjoy my 4th with out worrying about battering my own stuff!  But don't get me wrong, I love to cook!
